Garlicky Cauliflower "Steaks" and Stir-Fried Mushrooms

Cauliflower? Good. Mushrooms? Good. A full meal of these delicious items complemented by tasty sauces that comes together in under half an hour on a weeknight? GOOD.

With summer in full swing, there is so much amazing produce around that I cannot resist vegetarian, or at least vegetable-forward, meals at all times. It might be a foreign concept to some, but when you move beyond the "vegetablesaregoodformemusteatthem" to really embracing the myriad tastes, textures, and flavors that they can produce, you'll find that  you hardly miss the protein. Worried about nutrition when doing so? Truth is, Americans eat FAR more protein than we really need. That whole "protein at every meal" is a fallacy... and also not dependent on meats. Enjoy nuts, quinoa, and more for other more environmentally and healthful ways of filling up!

Garlicky Cauliflower "Steaks"
Time: 20 min

Ingredients:
2 large cauliflower heads
4 tsp olive oil
1/2 tsp black pepper
8 oz Wegman's Garlic Simmer Sauce

Carefully trim the greenery from the bottom of the cauliflower, keeping the head intact. Slice vertically in the center, then slice vertically 1/2" to 3/4" from that vertical slice to create 4 "steaks" as shown in the picture. Save the rest of the cauliflower for another use. (When I make these steaks, I then floret the rest, toss with some olive oil and curry powder, and roast for 30 minutes for a delicious side.)

Heat a large pan over medium heat. Add half the olive oil, swirling to coat. Place half the steaks carefully in the pan. Sprinkle with half the black pepper. Cook for 4-6 minutes or until edges begin to brown. Gently flip. Add half the garlic simmer sauce and cook for another 4-6 minutes. Transfer to serving plate and repeat with the other half. (Or use two pans to make this faster.) Enjoy!

Stir-Fried Mushrooms
Time: 10 min

Ingredients:
2 tsp olive oil
8 oz shiitake mushrooms, sliced
2 tbsp Wegman's Stir Fry Sauce

Heat a pan over medium high heat. Add the olive oil, swirling to coat. Add the mushrooms and saute for 3 minutes, stirring to keep from burning and to cook evenly. Pour in the sauce, toss well, and saute for another 3-5 minutes or until the mushrooms are wilted. Enjoy!
