Shrimp Cauliflower Fried "Rice"

Who doesn't love fried rice? It's delicious comfort food, but unfortunately it can also leave you feeling a bit heavy and guilty for eating an oily, salty meal. Not in this case! Here, your "rice" is actually cauliflower in rice form and we add in several types of veggies and some succulent shrimp. It hits the spot and fills you up without the guilt. In fact, feel free to chow down since there's really nothing bad at all in this meal!

Shrimp Cauliflower Fried "Rice"
Ingredients:
1 head of cauliflower
1 tbsp peanut oil
1/2 c onion, diced
1 large egg, lightly beaten
1.5 c frozen peas and carrots
1 lb large shrimp, peeled, deveined, tail removecd
1/2 c Wegman's stir fry sauce

Wash and cut the cauliflower in large florets. Run them through the mincing setting of a food processor to create "rice." Set aside.

Heat a wok over medium-high heat. Add the peanut oil, swirling to coat. Add the onion and stir-fry for two minutes. Add the egg and cook for another 30 seconds, scrambling it. Toss in the peas, carrots, and shrimp. Cook for 4-5 minutes or until shrimp are fully cooked (but not overcooked! they cook quickly) and the veggies are soft. Drizzle the stir fry sauce over top, toss well to coat evenly, and cook for another 30 seconds.
