Caramelized Lemon Salmon

Salmon = yum! It’s also full of those omega-3s we’re supposed to be eating, making this a great fish to enjoy at dinner. However, always make sure to consult Monterey Aquarium’s Sustainable Seafood Guide before purchasing your fillets since there are a lot of salmon options and many are not sustainable.

This delicious recipe combines maple syrup with lemon for a caramelized fish that’s absolutely delicious without being overly sweet. I highly recommend whipping up this very fast and easy recipe for yourself or to please guests. Make sure to use the freshest, most high quality syrup you can find for outstanding results.

Caramelized Lemon Salmon
Ingredients:
1 lemon
1 tbsp apple cider vinegar
2 tbsp maple syrup
1 tbsp canola oil
12 oz salmon
¾ tsp black pepper

Juice the lemon and grate some of the rind. Combine 2 tbsp lemon juice, 1 tsp lemon rind, the apple cider vinegar, maple syrup, and canola oil in a bag. Mix well. Add the fish to the bag and marinate for 10 minutes.

Heat a broiler-safe pan over medium-high heat. Carefully remove the salmon from the bag, reserving the marinade. Put the salmon in the pan and cook for 3-4 minutes. As it’s cooking put the reserved marinade in a microwave-safe bowl and microwave for 1 minute. It should have thickened slightly.

Brush a small amount of the marinade over the top of the fish, avoiding too much dripping off, reserving the rest. Put the pan in the oven and broil for 4 minutes or until cooked through. Drizzle the rest of the marinade on top. Enjoy!
