Tuna Avocado Tacos with Roasted Tomatoes and Asparagus

Fast, simple, nutritious, delicious. This dinner has it all. The tacos have only a few ingredients, but pack a punch of flavor. Make these when you're short on time but still want to wow your guests (or just yourself.) Also, while I used albacore tuna here, you can certainly substitute another kind.

Then, if you've never had roasted tomatoes before, you are in for a treat. When they are roasted they become extra sweet and juicy. Just be careful eating them or you might end up with tomato juice shooting all over your shirt!

Tuna Avocado Tacos
Time: 20 min

Ingredients:
1/2 tsp olive oil
1 lb Albacore Tuna steak
2 avocados
3/4 c red onion, sliced
1 tbsp lime juice
1/4 tsp salt
16 small white corn tortillas

Get a grill pan heating over medium-high heat. Add the oil, swirling to coat. Put the tuna on the pan and cook for 5-6 minutes on each side or until cooked to your desired degree.

As the fish is cooking, prepare the avocado. Mash the avocado in a bowl. Add the red onion, lime juice, and salt. Mix well.

When the fish is done slice it thinly. Divide the fish and avocado mixture evenly among the tortillas. Enjoy!

Note: Heat the tortillas in the microwave or for 30 seconds in the oven to make them extra tasty.

Serving size: 4 tortillas with a total of 1/4 lb fish and about 2/3 c guacamole

Roasted Tomatoes and Asparagus
Time: 15 min

Ingredients:
1 bunch asparagus, ends trimmed
1 c grape tomatoes
6 tbsp shallots, diced
1 tsp Thyme, dried
1/4 tsp black pepper

Get your oven pre-heating to 400 degrees.

Grease a 9x13 glass baking dish with cooking spray. Rinse and trim your asparagus stems. Put them in the dish. Add the cherry tomatoes (whole), shallots, Thyme, and black pepper. Toss to coat evenly.

Bake for 6-8 minutes or until the vegetables are tender. Be very careful eating the tomatoes - they will be amazing, but super juicy. Make sure to pop the entire thing into your mouth because if you bite into it you'll have tomato juice squirting everywhere!
