Arugula-Apple-Brie Quesadillas

Looking for a quick, healthy meal? This upscale quesadilla is a perfect choice. The creamy, mild brie is matched perfectly with crisp, fresh, local apple and the natural spice of arugula. It's a delicious combination that will leave you eager for more.

I whipped these up on a weeknight for a filling and healthy dinner. They come together extremely quickly, so you can make a homemade meal without being pressed for time. And feel free to experiment with ingredients and let us know in the comments below if you find a really delicious addition!

Arugula-Apple-Brie Quesadillas
Ingredients:
3 tbsp apple cider
2 tbsp dijon mustard
8 wheat tortillas
7.7 oz brie, sliced
1.25 c apple, thinly sliced
4 c fresh arugula
1 tsp black pepper

Put the apple cider and dijon mustard into a small mixing bowl. Whisk until evenly combined.

Heat a large pan over medium heat. Take two tortillas and fold in half. Open the tortillas up again. You'll be placing all of the toppings on one side and the fold will help show you the middle. That way you can fold the top back down to "close" the quesadilla.

Spread 1/8 of the mustard-cider mixture on one half of one side of each tortilla. Place 1/8 of the brie on top of the mustard mixture, followed by 1/8 of the apple, 1/8 of the arugula, and 1/8 of the black pepper. Fold the other half of the tortilla over so you have two complete quesadillas.

Place the two quesadillas into the pan. Cook for 3-4 minutes. Flip carefully to keep the fillings inside. Cook for another 3-4 minutes. The quesadilla should lightly brown and the cheese should melt.

Remove and keep warm. Repeat with the rest of the quesadillas. Then cut them into wedges and enjoy.
