I paired these potatoes with some cajun catfish, one of my favorite standbys, and some freshly sauteed broccoli rabe with garlic. The entire meal came together in under an hour, kept my wallet from getting too light, and still served its purpose in a delicious and healthy homemade meal.

Truffled Roasted Potatoes
Ingredients:
4 c fingerling potatoes, cut into bite-sized pieces
2 tsp olive oil
4 garlic cloves, minced
1 tsp black pepper
1/4 tsp fake No-Salt salt substitute
1/2 tbsp. white truffle oil
Get your oven heating to 450 degrees. Then chop your potatoes so they are prepped to go. Many fingerlings are so small you can simply cut them in half but some need to be in thirds or even quarters.
Grease a roasting pan with cooking spray and then toss in the potatoes. Sprinkle the potatoes with the olive oil, garlic, pepper, and fake salt. Toss to combine until evenly coated.
Bake for 35-40 minutes, or until browned and crisp on the outside but quite tender. Then, remove them from the oven. Pour the truffle oil over the potatoes and toss again to combine. Serve immediately - and try not to eat all of them yourself!
