Unfortunately I forgot to take a picture, but this meal is still worth remembering! This marked only my second foray into the use of bulgur, but it definitely won't be my last. This whole grain is not only delicious, and even somewhat "meaty" in a way, for those omnivores reluctantly having a vegetarian dinner, but also packs in fiber, protein, and iron along with several other key nutrients. You can enjoy it guilt-free, though of course, as with all carbs, moderation is still key.
Here, the bulgur bulks up a delicious stew-like meal that is topped with broccoli rabe, onions, and poached eggs. This dinner in one will leave you feeling satisfied and content without being overly stuffed nor guilt-ridden at your binge. Always a fan of breakfast for dinner, this savory meal even had my husband raving... a husband who is generally not a fan of mixing his meals and used to see eggs at dinner as anathema.
